Purpose. The aim of the article is the development of theoretical provisions for assessing the demand for pig products and practical recommendations for the creation of a slaughtering system in Ukraine.
Methodology of research. The calculations for the elasticity of consumer demand in the pig products market are carried out using correlation-regression analysis, questionnaires – to determine the benefits of consuming certain types of meat and meat products of the population of Ukraine, estimated – to determine the relationship between sales of pork and fat, monographic – for generalization of scientists concerning the formation of demand for pig slaughter products.
Findings. It is substantiated that the majority of pork is consumed by members of households with medium and high income, and fat is low. It is revealed that economic factor influences this circumstance, in particular the level of market prices.
It has been determined that, the consumption of lard and low-grade pork is increasing in the country in the conditions of increasing crisis phenomena, which is reflected in the corresponding price ratio between them, and consumers are oriented towards self-sufficiency of pig slaughter products at the expense of the personal peasant economy and family ties.
Originality. It is substantiated that in order to revitalize the activity on modernization and construction of slaughtered livestock and poultry facilities in rural areas it is expedient to provide 50% compensation at the expense of the state budget. It is promising to create slaughter points based on rural servicing cooperatives or on the basis of cooperation, for which it would be advisable to foresee the introduction of the value of the land plot for its arrangement by the village community to the statutory fund and to be released for 3 years from the payment of the land tax.
Practical value. The proposed methodological approaches to determining the elasticity of consumption of pork and fat from the level of incomes can be used in the development of measures for domestic food assistance by state and local self-government bodies, agricultural and processing enterprises – in developing a strategy of production and economic activity.
